Color: Red wine from the Gaillac region, a special cuvée — the winery's "UFO," as its name suggests. Dark red color, complex and spicy nose, with notes of dark fruits, leather, and undergrowth after a few years of aging. Dense and deep palate, full-bodied chewiness, tannins softened by time. A well-aged, atypical, and personal red wine. "Mille-feuille" maceration (alternating layers of whole and destemmed bunches) for 3 weeks.

Grape varieties: Grenache & Braucol.

Sylvie Ledran, Philippe Maffre, and their son Hippolyte are farmer-vintners from the Gaillac region, based in Bois Moisset in the commune of Montans, on the right bank of the Tarn river. The farm has been in the family since the 18th century: it is a polycultural operation, certified organic since 1995, with 15 hectares of vines planted on sandy, silty, and gravelly soils (the famous "boulbènes") carried by the Tarn — a unique terroir in the Gaillacois, which is usually characterized by the clay-limestone soils of the left bank. Alongside the vineyards, the farm raises a herd of hardy cattle breeds (Lourdaise, Salers, Gasconne), cultivates lentils, soybeans, ancient grains for flour and bread, and also produces sunflower oil and grape juice. Long-time members of the Confédération Paysanne, Sylvie and Philippe advocate for a different agricultural model: autonomy, biodiversity, and the transmission of farms. The winemaking is natural, without added sulfur, in concrete or stainless steel tanks, using the indigenous grape varieties of Gaillac — Braucol (Fer Servadou), Duras, Prunelart, Syrah, Mauzac, Len de l'Œil, Ondenc. The result: lively, crisp terroir wines, with supple and delicate tannins, often labeled as Vin de France rather than AOP Gaillac, claiming complete freedom of expression.

Label & Natural Wines

Some labels can help us identify a natural wine. The AB label, for example, certifies organic farming. The Demeter label, for its part, guarantees biodynamics. There is also the 'Vin Méthode Nature' label, as well as 'Nature et Progrès', 'Les Vins SAINS', and many others.

Some estates choose to adhere to a single label, or even not to be labeled at all, even though their cultivation and winemaking method would allow it. In other words, there is no strict rule. It all depends on the winemaker's vision, his desires, and his convictions.

For us, it is important to meet all the people we work with in order to understand their working method and select the products that match our ideology.

We also find it important to consume a product grown and vinified with respect for the fauna and flora, preserving all the life around and in it.
