Graincheux 2021, Domaine les Vigneaux

Clay-limestone soil. Whole harvest, aging in concrete vats. 35/40 year old vines. No added sulfur.
Capacity 75 cl, alcohol content 12.7%.

A word from the winemaker:
"We have been working in organic farming for 21 years and follow biodynamic practices on our 12 hectares of vines located in Valvignères in Ardèche. We follow each step from the vine to the development and sale of our wines by having consistent agricultural practices and "common sense": moderate soil work, contribution of organic matter, spraying of plant preparations. All this, taking into account lunar influences, allows to reduce the doses of copper, to promote microbial activity, to strengthen the energy of the vine and to stimulate its natural defenses. The goal is to find a balance and to let the terroir express itself through the wines! Our wines ferment with indigenous yeasts, are vinified naturally, without any addition and without sulfur (rarely used at bottling for certain fragile vintages). They are neither fined nor filtered, in order to best preserve all their aromatic materials."

Why not open it as an aperitif with focaccia or cold cuts. For the meal, we prefer cooked vegetables, gratin or stuffed. A stone grill, paupiettes or grills, even a raclette! Slightly spicy tomato or forest sauces.

Wine for friends, wine of thirst for laughter, screams, lively discussions, loud music, until the end of the night. A chameleon wine, which will adapt to all times and all situations, from aperitif to dessert, from midday to midnight.
