Color: Dry, sparkling white wine, a blend of Sylvaner and Riesling from the Bihl lieu-dit. Neither still nor effervescent — an in-between offered by nature, with spontaneous re-fermentation in the bottle and a hint of fermentative reduction. The effervescence varies from bottle to bottle, reflecting life itself, with the freshness and straightforwardness characteristic of the Bihl lieu-dit.

Service Tips: Serve well chilled, around 8-10°C. Open the bottle carefully — as nature is unpredictable, the effervescence may vary from one bottle to another. Let it breathe for a few minutes after opening if the reduction is noticeable on the nose.

Guard time: Drink now to enjoy its energy, but it can age 3 to 6 years, developing more complexity.

The Jean Ginglinger & Fils estate is a family business in Pfaffenheim, south of Colmar, where vines have been cultivated since 1610. Jean-François Ginglinger, 12th generation, took over his father's operation in 1999 and very early on committed the estate to the path of life: first biodynamic trials in 1997, organic and biodynamic certification in the early 2000s, then a switch to natural wines from 2003. Since 2012, most of the production has been made without added sulfur, with indigenous yeasts and without inputs, on six hectares, a third of which is on the Grand Cru Steinert. The soils have been plowed by horse since 2015. A cousin of Bruno Schueller and close to Gérard Schueller, Patrick Meyer or Jean-Pierre Frick, Jean-François is one of a handful of winemakers who have made "natural Alsace" a benchmark. The character of "Changala" found on his labels is a nod: a caricature of himself, a joyful signature of his turn towards free wine.

Label & Natural Wines

Some labels can help us identify a natural wine. The AB label, for example, certifies organic farming. The Demeter label, for its part, guarantees biodynamics. There is also the 'Vin Méthode Nature' label, as well as 'Nature et Progrès', 'Les Vins SAINS', and many others.

Some estates choose to adhere to a single label, or even not to be labeled at all, even though their cultivation and winemaking method would allow it. In other words, there is no strict rule. It all depends on the winemaker's vision, his desires, and his convictions.

For us, it is important to meet all the people we work with in order to understand their working method and select the products that match our ideology.

We also find it important to consume a product grown and vinified with respect for the fauna and flora, preserving all the life around and in it.
