WINEMAKER'S STORY — Renaud Bruyère & Adeline Houillon

Domaine Bruyère-Houillon is one of the most sought-after yet discreet names in contemporary Jura winemaking, located in Pupillin, near Arbois — a village dubbed the "world capital of Ploussard," where the local spelling is preferred over "Poulsard."

Adeline Houillon and Renaud Bruyère established their domaine in 2011, starting with 75 ares of vines in the Les Tourillons lieu-dit in Arbois. The couple's pedigree is impressive: Adeline is the sister of Emmanuel Houillon (of Domaine Pierre Overnoy) and grew up immersed in the world of natural wine alongside her brother and the legendary Pierre Overnoy, a pioneer of sulfur-free Jura wines; Renaud, originally from Tain-l'Hermitage, trained with Overnoy and Stéphane Tissot. These influences explain the precision and clarity of their wines — even though the couple has forged their own distinct identity.

The domaine now spans approximately 4 to 5 hectares, spread across the red, grey, and blue marl terroirs of Pupillin, Arbois, and Montigny-lès-Arsures. They cultivate the indigenous Jura grape varieties — Ploussard, Trousseau, Chardonnay, and Savagnin — using uncertified biodynamic practices, "out of ideology and conviction." Vinification is as natural as possible, with no additives from harvest to bottling. With naturally low yields from old vines, each vintage produces only a few thousand bottles — hence the rarity and cult status of these wines, which boast vibrant purity and great aromatic delicacy.

Label & Natural Wines

Some labels can help us identify a natural wine. The AB label, for example, certifies organic farming. The Demeter label, for its part, guarantees biodynamics. There is also the 'Vin Méthode Nature' label, as well as 'Nature et Progrès', 'Les Vins SAINS', and many others.

Some estates choose to adhere to a single label, or even not to be labeled at all, even though their cultivation and winemaking method would allow it. In other words, there is no strict rule. It all depends on the winemaker's vision, his desires, and his convictions.

For us, it is important to meet all the people we work with in order to understand their working method and select the products that match our ideology.
